green goodness dip & dressing {paleo/whole 30}

i always hesitate on whether or not to add that "paleo/whole 30" clause to my title or cover photo.
i think there's a common misconception that "paleo" or "whole 30" or "healthy" are all synonymous with "won't taste great but you'll have to act like you enjoy it since you're trying to lose weight/be healthy/get in shape/be a hippie."
please trust me {and isn't that what they all say??}, but that is most certainly not the case with this recipe.

several weeks ago, i was making my very favorite meal--fish tacos--and was looking for an alternative to the traditional cilantro dressing that i usually make to top them.  i knew the flavors i wanted to include and couldn't find the "just right" recipe.  there are plenty of "green goddess" dressing recipes out there...but none of those was what i was looking for, either.  instead, i ended up taking two or three different formulas, threw them together with a good dash of wingin' it myself, and was thrilled with the results.

you know how sometimes you come up with a recipe and then, once it's gone, you convince yourself that it wasn't really as good as you thought it was?  
that maybe you made more of it in your head than it was in reality?
yah.  i totally did that with this.
second-guessed and doubted myself.

and then.
then i made it again.
and again.
and again.
and the third and fourth times i made it, i doubled the recipe.  
that's how much we eat it.
my four kiddos love it.
they'll dip just about anything into it--pretzel sticks, cucumber slices, carrots, tortilla chips, 
chicken breast strips...you name it.
it truly is that good.

ok.
here ya go...

☛green goodness dip & dressing
1 whole avocado, peeled and pitted
3-4 scallions, white and green parts, broken into small-ish sections
large handful of cilantro, rinsed {adjust to taste}
⅓ - ½ cup mayo {i used my homemade mayo}
¼ cup olive oil
¼ cup lime juice
3-4 cloves minced garlic
½ teaspoon salt
coconut milk

put all ingredients in blender and purée.  
add coconut milk until desired consistency {less for dip, more for dressing}.

and just try to keep yourself from spreading it on everything in sight.
