paleo apple pie smoothie


here's what i want you to do...
close your eyes.
come on, now.  close 'em.
imagine your very favorite apple pie...
maybe it's that one your mom makes every year for thanksgiving...
or maybe your grandma makes it.
maybe perkin's or baker's square or sara lee makes it...
if so, please don't tell me about it.  please.  just keep that one to yourself.

anywhoo...
imagine a generous wedge of that glorious apple pie...
and now, envision that pie topped with homemade vanilla ice cream.
i'm not talking about the yellow-food-dye-infested "french" vanilla stuff you buy in a bucket for $6.99.
i'm talking homemade, real-cream, real-sugar, real-vanilla ice cream.

and now...
now you've got what this smoothie tastes like.
take my word for it, folks, you've got to try this one.
my ten-year-old son who doesn't like bananas, who will only eat raspberry yogurt because all the others have chunks, and whose favorite food is pizza took a sip of my smoothie the other day and immediately looked up at me wide-eyed exclaiming, "how do you get it to taste like that?!?"
it's just.that.good.


apple pie smoothie {with optional paleo instructions}
1 large apple, cored and cubed {i don't peel mine.  i use honeycrisp.}
1 large handful of ice
¼ cup plain greek yogurt {omit if paleo}
scant ¼ cup old-fashioned oats~OR~2 tablespoons almond butter {paleo}
3 tablespoons pure maple syrup
½ teaspoon cinnamon
milk {or almond/coconut milk}
1 raw egg {optional...very optional}

blend first six ingredients together, adding milk until desired consistency is reached.  i usually prefer my smoothies very thick, but this is one that i actually enjoy more when it's the consistency of a milkshake, maybe even a bit thinner.
if you're incredibly brave and feel like taking your life into your hands, you can do what i do and toss a raw egg in during the last minute or so of blending.  it will give you a luscious foamy finish atop your smoothie...
of course, plenty of people will also tell you that it will give you salmonella, too...so there's that.  
daring, i tell ya.  bold and awfully daring.

this recipe makes nearly a quart of fabulously delicious smoothie...
and is best if you drink it almost immediately.
some smoothies can sit for a bit and not be any worse for wear...
in this one, the apple and oats seem to soak up the moisture and get very pulpy.  
sit down, take a few minutes to breathe, and just enjoy it.
i promise you'll want to make one again tomorrow.
or maybe for lunch today.
